Amaro 101: Italy’s Bittersweet Tradition

Amaro (plural amari) simply means “bitter” in Italian, and covers a broad family of herbal liqueurs made by infusing a neutral spirit or wine base with roots, barks, citrus peel, and botanicals, then sweetening and often aging the result. Nearly every Italian region has its own historic amaro recipe, many originally created by monks or pharmacists as digestive tonics.

The category spans an enormous flavour range. Lighter amari like Aperol sit closer to a bittersweet aperitif, while intensely bitter, medicinal-leaning styles like Fernet-Branca or Amaro Montenegro sit at the opposite end, built to be sipped after a meal to aid digestion rather than before one to build appetite.

Sambuca and limoncello, both hugely popular Italian exports, technically sit slightly outside classic amaro territory — sambuca is an anise-flavoured liqueur, and limoncello is a lemon liqueur made by steeping citrus zest in alcohol — but they share the same tradition of regional Italian liqueur-making and are typically shelved alongside amari.

Amaro has seen a major resurgence in craft cocktail bars over the last decade, prized by bartenders for the complexity and bitterness it can add to a drink without needing a full bitters dash. A Negroni, for instance, is essentially built around Campari, itself a bitter Italian aperitivo liqueur in the same broad family.

For a home bar, a single well-chosen amaro can do double duty — sipped neat over ice after dinner, or used to add depth to classic cocktails that would otherwise taste flat.
