Rye whiskey is legally required to be made from at least 51% rye grain in the United States (Canadian rye rules are looser, which is a common source of confusion). That rye content is what gives the spirit its trademark character: spicy, peppery, and drier than corn-forward bourbon.
Historically, rye was America’s original whiskey before bourbon overtook it in popularity in the 20th century. It fell out of fashion after Prohibition but has come roaring back over the last two decades, largely driven by the classic cocktail revival — a Manhattan or a Sazerac made with rye has a structure and spice that bourbon simply can’t replicate.
On the nose and palate, expect notes of black pepper, dill, cinnamon, and dark rye bread, balanced by the same vanilla and caramel that new charred oak barrels bring to any American whiskey. High-rye mash bills (containing 90%+ rye) push those spicy, herbal notes even further, while lower-rye examples sit closer to bourbon in sweetness.
