Cognac vs Brandy Explained

Brandy is simply any spirit distilled from fermented fruit, most commonly grapes, though apple brandy (like Calvados) and other fruit brandies exist too. Cognac is a legally protected, geographically restricted category of grape brandy that can only be produced in the Cognac region of southwestern France, under rules almost as strict as Champagne’s.

To be labelled Cognac, the spirit must be made from specific grape varieties (predominantly Ugni Blanc), double-distilled in copper pot stills, and aged in French oak barrels for at least two years — though quality Cognac is almost always aged far longer. Age categories like VS, VSOP, and XO tell you the minimum time the youngest component in the blend spent in oak.

Calvados, by comparison, is apple (and sometimes pear) brandy from Normandy, with its own strict appellation rules. American and Australian brandies, meanwhile, have far fewer regulatory restrictions and can be made from a wider range of grapes and aging regimes, which is why quality varies more widely outside the protected European categories.

On the palate, Cognac tends toward dried fruit, honey, and delicate floral notes layered over oak, while Calvados carries a more rustic, orchard-fruit character. Extremely old, prestige Cognacs like Louis XIII (a blend of eaux-de-vie some over a century old) sit at the very top of the spirits world in both price and complexity, often compared to the rarest whiskies for collector demand.
