The Rise of Australian Single Malt Whisky

Australian whisky is a genuinely recent story. Distilling spirits above a certain strength was effectively illegal for small producers until the law changed in the early 1990s, which is why the country’s oldest modern distilleries — including Lark, founded by Bill Lark in Tasmania in 1992 — are barely three decades old, compared to centuries-old Scottish houses.

Tasmania became the epicentre almost by accident: it has soft, mineral-rich water, a cool maritime climate similar to Scotland’s, and access to local peat bogs and barley. Small-batch, single-cask production became the norm out of necessity — Australian distilleries are tiny compared to Scottish giants — which paradoxically became a selling point, since every cask has its own distinct character.

Australian single malts started winning major international blind tastings in the 2010s, culminating in Sullivans Cove’s French Oak single cask being named World’s Best Single Malt at the World Whisky Awards in 2014, beating entries from Scotland and Japan. That result put Tasmanian whisky on the global map almost overnight.

Flavour-wise, Australian whisky varies enormously by producer, but a common thread is fruit-forward richness from ex-fortified wine casks (particularly old Tawny and Muscat casks from Australia’s own wine industry) layered over gentle, often lightly peated, malt character.

Because production runs are so small, allocations sell out fast and rarely get restocked at the same price — which is why single-cask Australian releases, especially from Lark’s Legacy and rare cask series, have become genuine collector items rather than just a local curiosity.
