White, Spiced & Dark Rum: Choosing the Right Bottle
Rum is distilled from sugarcane juice or molasses, and unlike whisky or tequila, there’s no single international legal standard governing its categories — which is part of why rum labelling can be confusing. Broadly, though, white, spiced, and dark rum differ in aging and additives rather than raw ingredients.
White (or light/silver) rum is typically unaged or aged very briefly then filtered to remove colour, giving a clean, slightly sweet, grassy profile that’s the backbone of cocktails like the daiquiri and mojito, where you want the rum to support other flavours rather than dominate.
Spiced rum starts as a white or lightly aged rum base that has cinnamon, vanilla, clove, or other spices (and often caramel colouring) added after distillation. It’s built for easy sipping and mixing rather than nuance — closer to a flavoured spirit than a traditionally aged one.
Dark rum is aged in oak barrels, often for several years, picking up caramel, toffee, dried fruit, and baking spice notes much like a young whisky or brandy. Premium aged dark rums from Jamaica, Barbados, and Guyana are increasingly treated as serious sipping spirits by collectors, with some producers releasing single-cask, vintage-dated expressions comparable in prestige to rare whisky.
