Blanco, Reposado & Añejo: A Tequila Aging Guide

All legally certified tequila is made from the blue Weber agave plant, grown almost exclusively in and around Jalisco, Mexico, and its aging category is regulated by Mexico’s Tequila Regulatory Council (CRT). The category on the label — blanco, reposado, añejo, or extra añejo — tells you exactly how long it rested in oak before bottling.

Blanco (or plata/silver) tequila is unaged, or aged for less than two months, and is bottled shortly after distillation. It showcases the purest agave character: bright, vegetal, peppery, and citrus-forward. This is the category most cocktail bartenders reach for in a margarita, because the agave flavour needs to come through clearly.

Reposado (“rested”) spends two months to a year in oak barrels, taking on a pale gold colour and gentle vanilla, caramel, and oak spice notes while still retaining clear agave character underneath. It’s often considered the most versatile category — balanced enough to sip neat, but still works in cocktails.

Añejo (“aged”) rests for one to three years, developing deeper amber colour and much more pronounced oak, dried fruit, and caramel notes, closer in style to a young whisky. Extra añejo, a category only formalised in 2006, requires over three years in oak and produces the richest, most whisky-like tequilas on the market — Don Julio 1942 and Gran Patrón Burdeos are well-known examples finished in wine casks for additional complexity.

As a rule of thumb: reach for blanco when agave flavour is the point (margaritas, palomas), reposado as an all-rounder, and añejo or extra añejo for slow sipping neat or with a single large ice cube, the way you’d treat a fine whisky.
