White Wine Styles Explained: Chardonnay to Riesling

White wine style is shaped heavily by two winemaking choices: whether the wine is fermented and/or aged in oak, and whether it goes through malolactic fermentation, a secondary process that converts sharp malic acid into softer lactic acid. Both choices explain most of the stylistic gap between crisp, unoaked whites and rich, buttery ones.

Sauvignon Blanc is typically fermented in stainless steel with no oak contact, preserving its zesty, herbaceous, citrus-driven character — which is exactly why it tastes so different from an oaked Chardonnay, even though both are simply white grape varieties fermented into wine.

Chardonnay, by contrast, is often barrel-fermented and put through full malolactic fermentation, producing the rounder, creamier, vanilla-and-butter style associated with classic Australian and Californian Chardonnay — though many producers now also make lighter, unoaked versions in response to changing tastes.

Riesling sits at its own end of the spectrum: almost always fermented without oak, and prized for high natural acidity that can support everything from bone-dry to lusciously sweet styles depending on how much residual sugar is left after fermentation — a versatility few other white grapes can match.

When pairing white wine with food, acid and weight matter more than sweetness alone: a high-acid Riesling can handle spicy food beautifully even with a touch of sweetness, while a full-bodied oaked Chardonnay suits richer dishes like roast chicken or creamy pasta.
